Founder – ​ That’s Amore Cheese

Sicilian-born Giorgio Linguanti, founder of That’s Amore Cheese, embodies the passion and drive that has propelled him to become one of Australia’s most respected artisanal cheesemakers. 

Linguanti's passion for food flourished in his Italian homeland, where he worked selling regional food products from Italy’s Aeolian Islands, developing an appreciation for the unique processes and flavours crafted by generations of local families.

Undeterred by the language barrier, Linguanti moved to Australia in August 2004 to pursue new opportunities. Finding work in a local cheese factory – the challenge of learning both a new language and an intricate craft sparked a passion for cheesemaking that propelled him swiftly up the ranks. It was here that Linguanti discovered his true calling –cheesemaking.

In 2008, Linguanti channelled his newfound expertise into launching That’s Amore Cheese with his first product, Bocconcini Leaf, which became an instant favourite in Melbourne’s Italian restaurants. Followed by his now-renowned Burrata and Smoked Scamorza, his artisan skills and dedication to handmade cheeses quickly gained admiration among chefs, who were excited to incorporate his products into their restaurants’ menus.

With the business's early success, Linguanti expanded That’s Amore Cheese in 2010, taking over a cheese factory in Donnybrook. He then launched La Latteria Mozzarella Laboratory (2010) – a shopfront where cheese was made fresh on-site, allowing him to experiment with innovative products.

In 2015, That’s Amore Cheese moved to a larger facility in Thomastown, complete with a Cheesery, Deli and Café, and began exporting to more than 10 countries the following year. By 2018, Linguanti introduced Cannoleria by That’s Amore Cheese – a sister brand dedicated to crafting traditional ricotta-filled cannoli.

Today, That’s Amore Cheese is one of Australia’s leading artisan cheesemakers, with a team of more than 140 employees producing more than 65 types of cheese. In 202,4 Linguanti launched Giorgio’s Artisan Cheese – an exclusive range of premium, handcrafted cheeses available exclusively at select Coles Supermarket stores across Australia, expanding the brand beyond restaurants and into the homes of cheese lovers. ​ 

Linguanti's journey from advertising to award-winning cheesemaker is a testament to his unwavering dedication to authentic Italian craftsmanship that continues to delight taste buds across Australia and beyond.
