Aiven Lee is the Head Chef at Melbourne’s recently evolved, Yum Sing House serving up dishes where traditional Asian flavours meet modern twists. Born and raised amidst the bustling culinary tapestry of Kuala Lumpur, Malaysia, Aiven embarked on his gastronomic journey that would eventually lead him to the vibrant food scene in Australia.
Making Melbourne his home in 2006, Aiven's culinary journey spans a number of esteemed establishments; Becco, where he honed his skills, and Longrain, where he served as Head Chef. His tenure at Mamasita as Sous Chef further enriched his culinary repertoire, particularly in the realm of agave spirits. A pivotal moment in his career was his role as Executive Sous Chef, forming part of the opening team for Novotel Ibis Melbourne Central.
Aiven's approach to cooking is as dynamic as the flavours he creates. He finds inspiration in seamlessly weaving flavours of his heritage into his culinary narratives. His philosophy embraces creativity, honouring tradition, and above all, delighting the palate of every guest who graces his table. The joy of bringing people together through food, reminiscent of the warmth and abundance of his childhood celebrations, fuels his passion for cooking.
“My style of cooking is often influenced by the food that I like eating or growing up eating. Simple dishes that are full of flavours are what we always aim to do. Lee shares,
My biggest food inspiration would have to be my mum. With a Chinese background, a lot of our cultural celebrations often involve food, whether it’s with family members or religious offerings. She would often cook up to 25-30 dishes at these celebrations and it would all be incredibly tasty and flavourful”
A natural lover of the fast-paced hospitality world, Lee thrives in the kitchen environment. He shares,
“The pressure and push during service is what excites me the most on a day to day basis. The love to eat and to have the ability to create dishes time and again is what drove me to pursue a career in hospitality.”
Joining the Yum Sing House team as Head Chef in March 2021, Lee continues to elevate the dining experience with his passion for celebrating diverse flavours whilst honouring his Asian heritage.
