Claudio was born and raised in Emilia-Romagna, a land with an incredible gastronomic heritage, where cities like Bologna, Modena and Parma have contributed to shape what is considered today to be the idea of modern Italian cuisine.
After working in the corporate world as a Chemical Engineer and travelling overseas, Claudio moved to Australia and acted on a new ambitious purpose – to share his respect and love for artisan espresso, natural wines and slow food.
Claudio loves to view what he offers as a combination of chemistry and art. He brings his knowledge of chemistry to every aspect of his business whilst honouring the legacy of farmers, their ancestral practices and skilful craftsmanship. He achieved this in the beginning with the coffee he served – which proved to be a successful formula.
Now, Claudio is extending this to the food as everything that will be offered is designed, planned and executed through a combination of culinary art and engineering principles.
In doing so, he hopes that beyond the fascinating chemical complexity of the produce he uses, the story of craftsmanship and culture in every plate, cup and glass will be felt by each customer through a memorable sensory experience.
With this purpose in mind, it was crucial for Claudio that his team also shared his passions. The members of his management team are also authentic Italians who hold the same desire to share quality food and hold genuine Italian service in their hearts.

About Officina Gastronomica Italiana
Officina Gastronomica Italiana will open on Tuesday, 3 October after doubling its size, and expanding to offering dinners and a deli section. Originally opening as Officine Zero in 2014 by Claudio Casoni, it offers a well-curated list of Italian artisan wines, as well as seasonal house-made pasta by head chef Gabriele Coniglio. The All-day dining venue is open for breakfast and lunch, serving artisanal Italian espresso, pastries and Italian classics.
