Rebecca Grey is the Co-Founder and Director of Aquafab, a first-to-market aquafaba brand designed to increase the bar industry's operational efficiency while providing a sustainable and original solution to waste management.
An architect by trade, Grey brings a valuable perspective to the new product and is driven by a passion for innovative problem-solving and a commitment to operational efficiency.
With over 15 years of experience co-owning and managing the successful Melbourne-based architectural practice Partridge & Grey Architecture, her expertise in strategic thinking has been instrumental in her skill set,
“Architecture taught me to see both the bigger picture and problem solve to achieve success, which I carry with me throughout my work and life,” Grey explains.
As such, the emphasis on practical design in Grey’s architectural projects seamlessly translated into Aquafab’s mission of creating practical solutions for the bar industry.
In 2023, Grey opened Luton Lane Wine Bar in Hawthorn (VIC) alongside her business partner, Danny Kane – a hospitality veteran who has been in the industry for over 25 years. Coming into the hospitality world with fresh eyes, she quickly questioned the reliance on the use of egg whites in cocktails, which proved a nightmare for quality control. Her problem solving mindset sparked a vision to create stand-alone aquafaba – an inclusive alternative that was not readily available to purchase on its own.
“As society becomes more conscious, we wanted to design something that not only aligns with ethical values but also helps bars operate more efficiently,” says Grey.
Recognising the opportunity to lead a new wave of sustainable practices, Grey and Kane developed a first-to-market, vegan product that both addresses waste issues and is environmentally conscious.
“What sets Aquafab apart is its pioneering approach. No one has tackled this issue like we have, and I’m proud to be driving this industry shift alongside Danny,” she continues.
Looking ahead, Grey envisions Aquafab as more than just a product — it’s a movement towards a more ethical future for the bar industry. With her architectural background shaping her innovative mindset, Grey is committed to continually evolving the offering to meet the needs of an ever-changing industry.
“Our goal is to inspire change, not just in how bars operate, but in how the entire hospitality sector approaches sustainability,” Grey says.
